Chocolate Banana Bread

10 mins
12 Servings

  • 1 cup all-purpose flour
  • 1 ½ teaspoons baking soda
  • ½ cup plain rolled oats
  • ¼ cup cacao powder
  • 2 large eggs (I use free range)
  • 2 medium, overripe bananas (1 cup mashed)
  • ½ cup plain Greek yoghurt
  • ¼ cup maple syrup
  • ¼ cup dried dates
  • ½ cup chocolate chips (optional)

  • 1.Preheat oven to 175c/350F.
  • 2.In a large bowl, combine flour, oats, cacao powder and baking soda. Stir until well combined.
  • 3.Place the dates in a food processor and blitz until tiny small pieces. Add a dash of water (about 2 teaspoons) if needed.
  • 4.Add bananas, Greek yoghurt and maple syrup to blender and blitz for 10 seconds or until combined.
  • 5.Lightly beat the eggs in a medium mixing bowl. Add the wet ingredients to the bowl.
  • 6.Pour the wet ingredients into the dry ingredients and add the chocolate chips. Stir gently. Don’t over mix.
  • 7.Pour the batter into a lightly grease a 9” x 5” (23cm x 13cm) pan. Spread the mix evenly and bake for 35-40 minutes.
  • 8.Remove from oven. Cool for 10 minutes before placing onto a cooling rack.
