Classic Pumpkin + Feta Salad

This is an easy, classic and oh-so-delicious salad recipe to add to your repertoire. It’s perfect for meal prep…!


  • 1kg pumpkin, chopped
  • 1 red onion, chopped
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 cup pine nuts
  • 4-6 cups rocket leaves (or mixed leafy greens)
  • 100g feta, crumbled


  • 1.Preheat oven to 180c/355F.
  • 2.Add pumpkin and onion to a lined baking tray. Drizzle with oil and add salt. Bake in oven for 45 minutes.
  • 3.Remove from oven, add pine nuts and bake for another 5 minutes.
  • 4.Serve with rocket, crumble with feta and finish with balsamic glaze (balsamic vinegar will work too) and extra virgin olive oil.
