Mexican Sweet Potato Boats Topped with Feta

These healthy sweet potato boats are stuffed with fibre-rich beans, corn and topped with the goodness of feta cheese. Enjoy this easy-to-make meal for meat-free Monday or anytime you want to feel good.

Ingredients:

  • 2 large sweet potatoes, skin on
  • 1 teaspoon salt
  • 200g black beans
  • 200g sweet corn
  • 100g feta cheese, crumbled
  • 1 tablespoon hot sauce
  • ¼ cup chopped parsley, chopped

Instructions:

  • 1.Preheat the oven to 200c/390f. Slice sweet potatoes in half lengthways. Place on a lined baking tray and sprinkle with salt. Bake in oven for 45 minutes.
  • 2.Remove from oven and top with black beans, sweet corn and feta. Return to oven and bake for further 15 minutes.
  • 3.Once the feta has lightly browned, remove from oven. Finish with a splash of your favourite hot sauce and fresh parsley.
