Miso Salmon One Tray Bake


  • Total Time: 30 minutes
  • Yield: 2 1x

Ingredients

Scale
  • 2 salmon fillets
  • 1/4 head of cauliflower, chopped into florets
  • 8 brussel sprouts, quartered
  • 1 small sweet potato
  • 2 tbsp low sodium soy sauce (or tamari)
  • 2 tbsp sweet miso paste
  • 3 tbsp honey
  • 2 tbsp water
  • 2 tsp sesame oil
  • 1 tsp chilli flakes
  • 1 fresh lime, to serve

Instructions

  1. Pre-heat oven to 200c/390 F. Place salmon and vegetables on a lined baking tray.
  2. Add marinade ingredients in a bowl, mix well and pour over vegetables and salmon. Bake for 20-25 minutes. Serve with sesame seeds (optional) and fresh lime.

Notes

Cauliflower and brussel sprouts come into season during the cooler months. Paired with rich salmon (and all the goodness from the healthy fats), this is a great mid-week meal.
