By now, you might have realised that I adore a quick healthy curry recipe.

That’s because a quick, healthy curry recipe is my go-to healthy comfort food because it’s so ridiculously convenient and easy to make - plus it’s affordable.

Let’s be real.

When you come home after a long day, it’s tempting to dial in for your dinner from a takeaway joint.

This healthy 20-minute curry with basmati rice will be ready to eat long before Todd the delivery guy even has time to put on his helmet.

Save this recipe and you’ll save Todd the trip and money on takeaway meals.

This easy, peasy recipe is sensational (am I allowed to say that about my own recipes?) because it’s flavour and nutrient-rich.

And while I typically go for brown rice with quinoa, low GI rice or my favourite SunRice Supergrains, there isn’t a better pairing for an Indian curry than fluffy basmati rice (in my humble opinion).

Of course, I used SunRice Basmati rice because SunRice is my go-to choice and a Aussie company I’m proud to work with. (More on how SunRice and I know each at the bottom…!)

BTW - This healthy 20-minute curry recipe is also great for meal prep.

You can freeze it but I tend to eat it too quickly to fuss with that! Of course, play around with the vegetables you use to help you get through what’s in your fridge.

Healthy 20-minute Indian Curry with SunRice

Enjoy a healthy comfort meal, that’s ready to eat in just 20-minutes. Serve this wholesome (and affordable) dish with SunRice Basmati rice.

ingredients:

  • 1 Tbsp extra virgin olive oil
  • Half a cauliflower, cut into small florets
  • 200g green beans, trimmed
  • ¼ cup of Tikka Masala curry paste
  • 270g tin lite coconut milk
  • 420g tin of chickpeas, drained
  • 400g tin of lentils, drained
  • 2 cups SunRice basmati rice

instructions:

How to cook Healthy 20-minute Indian Curry with SunRice

  1. Cook SunRice Basmati rice according to the packet instructions.
  2. Heat olive oil in a large saucepan on high heat.  Add curry paste into saucepan and then add cauliflower and coconut milk. Stir to combine.  After 3 minutes, add the beans and cook for a further 5 minutes stirring occasionally.
  3. Add chickpeas and lentils to the saucepan, stir and cook for around 3 minutes until warmed through. Serve with fluffy SunRice basmati Rice.

NOTES:

For best results, Basmati rice should be rinsed and then soaked for 30 minutes prior to cooking. Legumes are a great way to add more fibre and plant-based protein into your diet. Feel free to use a more mild curry paste if sensitive to spice. You can also add capsicum, zucchini or snow peas to this recipe. This recipe is dairy-free, vegetarian and budget-friendly. Use a gluten-free curry paste to ensure this recipe gluten-free.
