Baked Asparagus with Crumbed Feta + Pinenuts
Asparagus is such a versatile veggie. You can pan grill asparagus for breakfast, toss into a salad or throw into a stir-fry.
I love baking asparagus. This Baked Asparagus recipe is so crazy simple and will be on the table in 15 minutes. It's a great recipe if you're entertaining or need a fast and healthy side.
Baked Asparagus with Feta and Pine Nuts
Prep time: 5 minutes
Cooking time: 10 minutes
Serves 4 as side
3 bunches of asparagus
1 tablespoon of extra virgin olive oil
½ small lemon – lemon zest and some juice
30g pine nuts
Pinch of salt
Preheat oven to 180c/365f. Place asparagus on lined baking tray. Drizzle with extra virgin olive oil, squeeze of lemon, add a pinch of salt, then sprinkle with pine nuts. Place tray in oven for 10 minutes.
Remove from oven. Garnish with lemon zest and feta cheese.
