I love baking asparagus. This Baked Asparagus recipe is so crazy simple and will be on the table in 15 minutes. It's a great recipe if you're entertaining or need a fast and healthy side.

Baked Asparagus with Feta and Pine Nuts

  • Prep time: 5 minutes
  • Cooking time: 10 minutes
  • Very easy
  • Serves 4 as side

Ingredients

  • 3 bunches of asparagus
  • 1 tablespoon of extra virgin olive oil
  • ½ small lemon – lemon zest and some juice
  • 30g pine nuts
  • Pinch of salt
  • 80g feta

Method

  1. Preheat oven to 180c/365f. Place asparagus on lined baking tray. Drizzle with extra virgin olive oil, squeeze of lemon, add a pinch of salt, then sprinkle with pine nuts. Place tray in oven for 10 minutes.
  2. Remove from oven. Garnish with lemon zest and feta cheese.
