It’s been a few months since I’ve publicly posted a new recipe on my site!

That’s because I’ve been creating hundreds of new recipes for Back to Basics.

The recipes I make for Back to Basics are totally different.. Firstly, the recipe criteria are REALLY strict…. AND they are 100% self-imposed. But for good reason.

I know you don’t have a heap of time to spare. You don’t want long or complicated ingredients lists.

If healthy food isn’t quick and easy, it’s unsustainable.

So Back to Basics recipes are super, ridiculously quick. Dinner recipes are ready in 20-minutes flat, and the oven does most of the work. Breakfast, lunch and snack recipes are done in <5 minutes.

That’s a totally different way of cooking. Super quick. Easy. Healthy.

Plus, I refuse to use expensive or hard to find ingredients in Back to Basics. I set myself an eight ingredient maximum. It’s easy to create complicated recipes. Very hard to create such simple, quick, healthy and easy recipes.

Today I spent the morning recipe testing for Back to Basics (my new norm) but this afternoon, I decided to play in the kitchen and make a ‘just-because’ recipe.

So here it is: My best healthy bran muffins.

They’re nut-free and kid approved making them lunchbox friendly.

  • These healthy bran muffins are perfect for meal prep, as they make for a healthy on-the-go breakfast or snack. They are really filling.

  • I love that this healthy bran muffin recipe is loaded with fibre, ideal if your kids need a natural boost of fibre in their diet.

  • They’re not too sweet, but sweet enough. You can serve them with honey or maple syrup if you feel you need.

  • I’ve swapped out ingredients like sugar for honey and dates - and butter for oil and yoghurt. These really are a much healthier bran muffin, that you can eat every day and feel good.

Best Healthy Bran Muffins (nut-free, lunchbox friendly, meal prep)

My best healthy bran muffin are a new healthy snack idea and they're seriously great for lunchboxes as they're nut-free. Make a batch of this bran muffin recipe ahead of a busy week for healthy meal prep.

ingredients:

  • 1.5 cups bran cereal*
  • 1 cup self-raising flour
  • 2 tsp baking powder
  • 1 tbsp cinnamon
  • 10 Medjool dates pitted
  • 2 tbsp honey (or maple syrup)
  • 2 tsp vanilla
  • 2 free-range eggs
  • 1/3 cup extra virgin olive oil
  • 1/2 cup plain greek yoghurt

instructions:

How to cook Best Healthy Bran Muffins (nut-free, lunchbox friendly, meal prep)

  1. Preheat oven to 190c/375f.
  2. Mix bran with one cup of very hot or boiling water. Set aside.
  3. Combine dry ingredients including flour, baking powder, cinnamon and 1/8 teaspoon of salt
  4. In a food processor, add dates, two tablespoons of boiling water, vanilla, eggs, yoghurt and oil. Blitz until smooth (there will still be specks from the dates, that’s OK).
  5. Pour mixture into the bran bowl. Add flour. Mix all ingredients. Add crushed nuts if you like. Spoon mix evenly into a greased muffin tray. Bake for 18-22 minutes.

NOTES:

*For the bran cereal, I just used Homebrand bran sticks. You can also use something like All-Bran cereal. You’ll need a muffin tray for this recipe. You can add 1/2 cup of crushed nuts like pecans if you like. Skip if these muffins are for school lunchboxes. These will healthy bran muffins freeze well. Or you can store them in an air-tight container for up to 3 days.
