Some people don't love fruit in a salad but I am not one of those people! Fruit adds sweetness, colour and nutrients. 

Strawberries are in season (don't you just love summer)?! Today, I bought a whole tray (16 punnets) for $7 from Harris Farm - so I needed to use them up!

I used a rotisserie chicken from the supermarket for this recipe. You can cook your own chicken for this recipe but, hey... sometimes convenience is king. I always opt for free range). Remove the skin and add it to the salad.

Toasted almonds would also be great in this recipe. I used pumpkin seeds because they were already toasted in the fridge. With seeds and nuts, I toast a whole batch and then store them in an airtight container for a quick healthy snack option (hello high protein/fat/fibre snack!) or I add it to salads or yoghurt. 

Aussie Asparagus is amazing at the moment, so I added those in for substance (and because they're cheap)! It takes jus a few minutes to cook. Broccolini would also be great here. 

In the photos, I used a balsamic glaze but this sweet balsamic dressing is delicious and easy for everyone to make.

Healthy recipe

Chicken Salad with Strawberry + Balsamic Glaze

  • Prep time: 5 minutes
  • Cooking time: 5 minutes
  • Serves 6


  • 6 cups of baby spinach leaves, rinsed
  • 1 punnet of strawberries, tops removed, quartered
  • 1/2 tablespoon extra virgin olive oil
  • 1 teaspoon sesame oil
  • 2 bunches of asparagus, trimmed
  • 1 avocado, cubed
  • 1 roast chicken, skin removed, shredded
  • 1/4 cup pumpkin seeds, toasted
  • 1/2 teaspoon salt

Dressing ingredients

  • 80ml/3oz extra virgin olive oil
  • 50ml/2oz balsamic vinegar
  • 1.5 tablespoons brown/coconut sugar 
  • Pinch of salt


  1. Heat a frying pan over med-high heat. Add olive and sesame oil to pan. Once hot, add asparagus. Saute for 3-5 minutes, tossing occasionally. Remove from pan, and cut on the diagonal (it looks fancy that way ;)  
  2. In a serving bowl, layer spinach leaves, strawberries, asparagus, avocado and chicken. Top with pumpkin seeds. Drizzle with sweet balsamic dressing.
