Healthy 20-minute Laksa Recipe with Carrot 'Noodles'

 

Want a healthy laksa recipe that is ready in 20 minutes? Yes, please!

If you want to use carrot noodles, you'll need a spiralizer (or buy the carrots already spiralized). Spiralizers start at about $10 and you can buy online here or from most homewares places. 

I used carrot noodles instead of vermicelli, not because I think they are unhealthy (they're not!) but because carrots are so good for you.

Healthy vegan Laksa Recipe with Carrot 'Noodles'

An additional dose of vitamin C from the carrots is good for your immunity, energy, and healthy eyes. It's also another food to eat for clear, healthy skin.

This recipe is naturally paleo, dairy-free, gluten-free, refined sugar-free, nut-free, parev, etc. You get the point! Skip the chicken and use veggie stock and it'll be vegan and vegetarian too - perfect for meatless Monday. 

Freeze the leftover lemongrass, ginger and kefir lime leaves until you need it again. 

You can also freeze any coconut milk you don't use. 

Add your own spin to the recipe: serve with crushed peanuts, coriander/cilantro, top with bean sprouts or throw in other veggies like zucchini, broccolini or capsicum/peppers.

Healthy Laksa Recipe with Carrot Noodles

Ingredients

  • 1 brown onion
  • 1-2 chillis
  • 1 clove garlic
  • 1 x 1-2cm/1 inch piece of ginger
  • 1 stick of lemongrass (white bits, discard the woodier, top bit)
  • 1 tablespoon extra virgin olive oil
  • 400g chicken stir-fry strips (optional)
  • 2 tablespoons of red curry or laksa paste
  • 1L chicken or vegetable stock
  • 2 cups of water
  • 270ml coconut milk (I used 'light')
  • 2 kefir lime leaves
  • 4-5 cup mushrooms, sliced
  • 2 large carrots, spiralized
  • 2 bunches of bok choy, end cut off, leaves separated
  • Juice from 1 lime

Method

  1. Blend onion, chillis, garlic, lemongrass and ginger in food processor until chopped. 
  2. Heat oil in a large saucepan then add blended mix. Cook for 2 mins or until brown. Then add chicken strips and curry paste. Cook for 2 mins. 
  3. Add stock, water, kefir lime leaves and coconut milk. Bring to the boil and cook for 5 min. 
  4. Add carrot noodles, bok choy and mushrooms. Cook for 5 mins. Add lime juice then serve and enjoy!
