Mexican Sweet Potato Boats Topped with Feta
So many women I speak to tell me they feel guilty for eating cheese. But you should never feel guilty for eating cheese (or any other food for that matter). Cheese is a food I eat almost every day for extra calcium, protein, and flavour.
It helps to keep you feeling fuller for longer and makes healthy eating more enjoyable. Add cheese to your salads, sandwiches, breakfasts or to baked sweet potatoes!
These healthy sweet potato boats are stuffed with fibre-rich beans, corn and topped with the goodness of feta cheese. Enjoy this easy-to-make meal for meat-free Monday or anytime you want to feel good.

Mexican Sweet Potato Boats Topped with Feta
Prep time: 5 minutes
Cooking time: 1 hour
- 2 large sweet potatoes, skin on
- 1 teaspoon salt
- 200g black beans
- 200g sweet corn
- 100g feta cheese, crumbled
- 1 tablespoon hot sauce
- ¼ cup chopped parsley, chopped
- Preheat the oven to 200c/390f. Slice sweet potatoes in half lengthways. Place on a lined baking tray and sprinkle with salt. Bake in oven for 45 minutes.
- Remove from oven and top with black beans, sweet corn and feta. Return to oven and bake for further 15 minutes.
- Once the feta has lightly browned, remove from oven. Finish with a splash of your favourite hot sauce and fresh parsley.
