One-tray Balsamic Pesto Chicken with Broccolini + Tomato Medley

I'm obsessed with fast but healthy dinners. Seeing as I don't have a dishwasher, minimal clean up is important to me.
To help balance this meal, serve with quinoa, brown rice or freekeh. I like those convenient microwavable packs for busy nights.
Have fun with this recipe and use different vegetables, depending on what you have in the fridge... because we #lovefoodhatewaste.
Asapragus, thinly cut sweet potatoes, red onion, cauliflower, mushrooms (etc) would also be great. Use what is in season (i.e. what is cheap and grown in your area).

You can make your own pesto for this recipe. I didn't have time so I just found one at the shops with the simplest ingredients list.
Want to eat less meat? I only used 400g of chicken for this recipe. I'm trying to eat less meat so I'm cutting back on meat portion sizes. I cut the chicken up into halves before I cooked it. That helps with portion sizes. My food budget now stretches further - and it's a win for my body and the environment. Little changes make a big difference.
FYI - I used chicken thigh for this recipe because I didn't want it to dry out!

One-tray Balsamic Pesto Chicken with Broccolini + Tomato Medley
- Prep time: 5 minutes
- Cooking time: 20 minutes
- Serves 3-4
- Very easy
- 400g/14oz chicken thigh, skin removed
- 1 bunch of broccolini (or asparagus)
- 1 punnet of tomato medley (about 300g/10.5oz)
- 1 tablespoon of extra virgin olive oil
- 3 tablespoons of pesto
- 2 tablespoons balsamic vinegar
- 2 tablespoons water
- Preheat oven to 190c/375F. Mix up marinade. Pour half the marinade over the chicken in a small bowl to coat chicken.
- Place broccolini and tomatoes on a lined baking tray. Add chicken. Pour remaining marinade over vegetables.
- Place in oven and cook for 18 minutes. For the last two mins, turn the oven to 'grill' (watching that it doesn't burn)! This will help brown up chicken. You can turn over the veg if they are too brown.
That's it! You're done... enjoy :)
