Pistachio + Honey Crusted Asparagus
Asparagus is generally pretty tasty but I think they are best with a crispy crumb - like this sweet and crunchy honey and pistachio crust. I love this recipe from the Keep It Real Program. This is a really easy to make a plant-based side dish that tastes as good as it looks.
Add a piece of salmon to the baking tray and serve with brown rice for a full meal.

Pistachio Honey Crusted Asparagus Recipe
PREP: 5 minutes
COOK: 15 minutes
SERVES: 4 as a side
- 2 bunches of asparagus
- 1 tablespoon of extra virgin olive oil
- 50g of pistachio nuts
- 2 teaspoons of salt
- 1 tablespoon of honey to drizzle
- Lemon juice from ½ lemon
- Preheat oven to 200C. Cut off stalky bits from asparagus ends and place asparagus on a lined baking tray.
- Add pistachios and salt to mortar and pestle or food processor and crush until light crumble.
- Drizzle asparagus with olive oil and then sprinkle with crumb mixture. Place in oven for 15 minutes.
- Remove from oven, drizzle with honey and add a squeeze of lemon juice. Season with salt to taste before devouring.
This fresh and crispy salad has so much flavour. I really love the dressing so I tend to double the recipe and keep the leftover in a jar for future salad adventures. Perfect for entertaining.
