Smashed sweet potato garlic bites

These smashed sweet potato garlic bites are legendary. Topped with crispy parmesan cheese, they taste so good and they're good for you too. 

This recipe is great when you are baking your meal. When I cook, I like to try to only do 1-2 cooking methods to reduce clean up and keep it simple. 

Enjoy this with baked salmon with tahini yoghurt, harissa barramundi with flaked almonds or chicken. You can also make it with the Baked Asparagus with Feta and Pine nuts.

I love sweet potato. It's got plenty of fibre (keep the skin on!) and beta-carotene, an antioxidant that is great for immunity and clear, bright skin (amongst many other things).

Smashed Garlic Sweet Potato Bites

  • Prep time: 5 minutes

  • Cooking time: 35 minutes

  • Very easy

  • Serves 4 as side


  • 600g (21oz) sweet potatoes (4 small sweet potatoes)

  • 2 tbsp grated parmesan cheese

Garlic marinade

  • 1 clove of garlic

  • 2 tablespoons of extra virgin olive oil

  • Pinch of salt


  1. Preheat oven to 180c/365f. Chop sweet potato into 1 cm thick rounds and place on baking tray. Cook for 30 minutes or until tender.

  2. Smash sweet potato rounds with fork. Pour garlic marinade on top. sprinkle with parmesan cheese and place in oven for 5 minutes. Remove when crispy! Enjoy
