Sweet Potato Curly Fries - Healthy Recipe

Let me warn you up front. You are going to want to eat this entire tray! They're that good. 

Now that the disclaimer is out the way let me introduce this crazy simple side dish to you: crispy curly sweet potato fries. 

You'll need a spiralizer to make them (you can purchase these for around $20), and not much else. 

When you put them in the pan, try not to overcrowd them. If they have space, they will be crispy. If they are touching each other too much, they won't crisp up.

You can also add herbs and spices to add more flavours. Italian herbs, oregano, thyme, paprika, chilli, or garlic? Whatever floats your boat. YUM.

Keep an eye on them in the oven. They can burn if you leave them in, even for just a couple of minutes.

Sweet Potato Curly Fries
A crispy sweet potato side dish or snack. You’re definitely going to want to make a double batch because these will be devoured in a blink of an eye. Crispy and moreish! The way vegetables should be.
Ingredients
  • 1 medium sweet potato
  • 2 tablespoons extra virgin olive oil
  • 1/4 teaspoon salt
Instructions
1. Preheat oven to 190˚C/375˚F2. Spiralize sweet potato. Add oil, herbs and salt and evenly distribute onto a lined baking tray. Bake for 18 - 20 minutes
