5 Ingredient Chewy Granola Bars


  • Total Time: 10 minutes

Ingredients

  • 2 cup plain rolled oats
  • 2 tbsp chia seeds
  • 1/4 cup pepitas
  • 1/2 cup honey
  • 1/3 cup smooth peanut butter
  • 1/4 cup toasted coconut flakes (optional)
  • 1/4 cup freeze dried strawberries, roughly chopped (optional)
  • 1/4 cup chocolate chips (optional)

Instructions

  1. In a large mixing bowl, combine the oats, chia seeds, pepitas and a pinch of salt. You can add any of the optional ingredients at this step.
  2. Grease a medium baking dish and line with parchment paper. The oil will stop the parchment paper from moving around.
  3. Place the honey in a small saucepan over medium heat and bring to the boil. Boil for exactly one minute and then remove from the heat and immediately add the peanut butter, stirring to thoroughly combine.
  4. Add the honey mix into the oat mixture and stir so all ingredients are well combined. It will start to harden as it cools so you will need to stir quickly.
  5. Once combined, place the mixture into the baking dish and push down firmly so it is flat on top and about 1cm (½ inch) thick.
  6. Once the mixture is cool, lift the parchment paper and mixture onto a board and cut into 8 bars. Place in the fridge for at least 30 minutes before serving.

Notes

  • Prep your ingredients out in advance as this recipe moves quite quickly.
  • The trick to getting these to stick together is boiling the honey for one minute so it hardens when cool. Placing them in the fridge afterwards helps to set them.
  • You can swap out chia seeds/pepitas for other seeds here if you like.
  • Freeze dried strawberries are my favourite addition here as they bring a lovely bit of acidity to balance the sweetness.
