Airfryer Zucchini Fries with Tzatziki

Ingredients

  • 1/2 cup plain flour
  • 2 free range eggs, lightly beaten
  • 3/4 cup panko breadcrumbs
  • 1 1/2 tbsp lemon herb and garlic seasoning
  • 3 zucchini, halved lengthways and crossways, cut into wedges
  • 5 ml olive oil cooking spray
  • 1/2 cup Greek-style yoghurt
  • 60 g feta cheese
  • 1 garlic clove, crushed
  • 1/4 cup fresh mint leaves, finely chopped

Instructions

  1. Place the flour into a small bowl. In a separate bowl, whisk the eggs together. In a third bowl, combine the bread crumbs and seasoning
  2. Start by coating each zucchini wedge in the flour, then dip into the egg mixture and then coat with the seasoned breadcrumbs. Place into the air fryer. Repeat the process until all zucchini are coated, trying not to overcrowd the basket. Cook for 12 minutes on 180C/355F
  3. Meanwhile, make the tzatziki. Combine the yoghurt, feta, garlic, mint and a crack of black pepper in a bowl. Use a fork to crumble the feta and combine all ingredients until a smooth consistency.
  4. Serve the cooked fries immediately with the tzatziki.

Notes

  • This serves 4 as a side or snack.
  • If you don’t have an air-fryer you can cook these at 220c/392f in the oven for 15-20 minutes or until golden brown.
