Easter Hot Cross Bun Pancake Stack

Hot Cross Bun Pancake Stack

Ingredients

  • 2 bananas
  • 2 free range eggs
  • 1/2 cup plain rolled oats (or quick oats)
  • 1 tsp cinnamon
  • 100 g cream cheese
  • 2 tbsp milk
  • 1 cup fresh berries
  • 2 tbsp maple syrup

Instructions

  1. Place oats, eggs, cinnamon, and bananas into a blender or food processor. Blitz into smooth.
  2. Heat a greased frying pan to medium-high. Pour in pancake batter, making about three pancakes per frying pan. Once bubbles appear and brown on the one side, flip. Cook for another minute or until cooked through.
  3. Meanwhile, add cream cheese and milk to the blender and blitz till smooth. Place in a ziplock bag, make a small hole in the one corner so you can pipe the mix out.
  4. Stack the pancakes between layers of fresh berries and cream cheese mix. Finish with a hot cross bun X on top. Serve with maple syrup.

Notes

  • Dairy-free option: Use lactose-free milk and cream cheese.
  • Pregnancy: You can eat fresh cream cheese while pregnant. Check the use-by date and ensure dairy is pasteurised.
  • Use thick yoghurt instead of the cream cheese/milk mixture if you like.
  • You can use frozen berries. It’s not the same, but it’ll do the trick. Simply defrost before using.
  • You can also serve with seeds, nuts, muesli or yoghurt.
