One Tray Portuguese Chicken with Brown Rice

Ingredients

  • 2 tbsp extra virgin olive oil
  • 1 brown onion, diced
  • 1 red capsicum (pepper), diced
  • 400 g corn kernels, drained
  • 2 tbsp Portuguese chicken seasoning
  • 1 1/2 cup SunRice brown rice
  • 500 ml chicken stock
  • 1/2 cup water
  • 600 g chicken thigh cutlets (bone-in)

Instructions

  1. Preheat oven to 180C/355F
  2. Drizzle oil on a large baking tray. Add onion, capsicum, corn and 1 Tbsp of seasoning and then stir to mix well. Add rice, stock and water into the baking tray and stir to combine.
  3. Place chicken on top of combined ingredients and sprinkle remaining seasoning on top of chicken pieces.
  4. Cover with foil and bake in the oven for 45 minutes.
  5. Remove foil, then return to the oven for another 15 minutes or until brown and water is fully absorbed.

You simply add all the ingredients to the tray, and the rice cooks at the exact same time as the chicken pieces.   • It’s really important to use chicken with the bone as it will cook at the same time as brown rice. You can choose to remove the skin if you like.
  • The rice will cook perfectly provided you keep the foil on for the specified time. If there is still liquid at the bottom of the rice, keep in the oven for a few more minutes until it evaporates.
  • Portuguese chicken seasoning can be found in all major supermarkets in the spice section. Otherwise, make your own with a combination of paprika, chilli flakes, salt and pepper.
  • Rice is naturally gluten-free. Check that the seasoning is also free from gluten to make sure this recipe is fully gluten-free. If you have a nut allergy, check the seasoning is also nut-free before using.
